Peruvian ceviche, declared an Intangible Cultural Heritage of Humanity

UNESCO made the decision during the eighteenth meeting of the Intergovernmental Committee for the Safeguarding of the Intangible Cultural Heritage, which will be held from last Monday to next Saturday in the town of Kasane, northern Botswana.

The committee approved Peru’s proposal, worded as “Practices and meanings associated with the preparation and consumption of ceviche, an expression of traditional Peruvian cuisine..

The candidacy is one of 55 applications for inscription on the Representative List of the Intangible Cultural Heritage of Humanity being examined by the Commission in the African country.

Ceviche is one of the most emblematic dishes and prized Peruvian gastronomy around the world.

It is a delicacy consisting of cMarinated meat – seafood, fish or both– with citrus dressing of which there are several versions that integrate the culinary culture of various Latin American countries in the Pacific.

In Peru, ceviche is considered the flagship dish and cultural heritage.
