Roasted cherry tomatoes are emerging as one of the most practical summer cooking solutions, offering a single preparation that can serve as a sauce, pate, or garnish across multiple meals throughout the week.
The recipe, developed by food creator Paufeel, requires just a handful of ingredients for four servings: 400 grams of cherry tomatoes, three garlic cloves, fresh rosemary, salt, pepper, and four tablespoons of extra virgin olive oil. Colorful varieties of cherry tomatoes can add a more visually appealing result, though any variety works.
Preparation
After washing the tomatoes, the key step is to pierce each one with a knife to prevent them from bursting during cooking and making a mess. The tomatoes are then tossed in a bowl with the chopped garlic, seasoning, rosemary, and olive oil until well coated.
Cooking times vary by method. In an air fryer, the tomatoes take around 12 minutes at 180 degrees, though this depends on the appliance. In a conventional oven, the same temperature requires about 25 minutes. They can also be cooked in a pan over medium heat until tender.
Uses and Storage
Paufeel described the recipe as the perfect one for her, calling it extremely versatile. Once cooked, the tomatoes can be blended into a quick tomato sauce, mixed with cream cheese for a tomato pate, or combined with burrata for a creamy pasta sauce. They also work as a topping on pizzas, focaccias, and toasts, or alongside boiled egg and tuna as a starter.
For storage, cooled tomatoes keep in glass jars in the refrigerator for approximately one week. The preparation also freezes well. The advice given is that vegetables should always be cooked before freezing rather than frozen raw, in order to preserve texture and flavor after thawing.
