Dr Jean-Marc Sene told viewers of French morning show Bonjour! La Matinale TF1 that the urge to eat dessert after a full meal is driven by a neurological process rather than personal greed.
Speaking on the television network TF1, Sene explained that while a restaurant diner may feel completely full after a heavy starter and main course, the brain responds differently when presented with sweet foods compared to savoury ones. A person who feels unable to eat another main dish or even a salad may still quickly find room in their stomach when a server offers the dessert menu.
According to Sene, human satiety operates in separate compartments for different flavours. While satisfaction levels drop for savoury items during a meal, the digestive system retains capacity for new sweet tastes.
He noted that overall food intake increases when a variety of items is available. In scientific experiments where researchers presented individuals with either different sandwiches or identical ones, people offered a variety ate 30 per cent more. Sene said the same increased consumption occurred in tests involving different flavours of yoghurt.
Neurological response to sugar
The tendency to accept a sweet dish at the end of a meal is also linked to how the brain reacts to sugar. Sene said a specific area of the brain reactivates the desire to eat as soon as sugar comes into view.
He emphasized that ordering a slice of cake or pie despite feeling full is a genuine neurological phenomenon rather than a sign of poor self-control.
Strategies to resist dessert temptation
To help diners avoid ordering extra desserts they do not need, Sene suggested taking steps to gain time by waiting 15 minutes before making a final decision. This delay allows natural feelings of satiety time to rise and register in the body.
He also advised people to pay close attention to what they consume during their meal and actively remember what they have eaten, noting that mental awareness of past consumption helps reduce the urge to eat more.
