High street coffee chains including Costa and Pret A Manger sell drinks containing high caffeine doses that trigger rapid body responses, expert testing shows.
Britain consumes approximately 95 million cups of coffee every day, according to industry figures, but consumer group Which? revealed this week that caffeine amounts vary dramatically between high street coffee shops.
Testing by Which? showed a medium cappuccino from Costa contains 325mg of caffeine, the equivalent of four cans of Red Bull energy drink. That single cup accounts for almost the entire safe daily limit of 400mg, or roughly five standard cups of coffee.
Meanwhile, Pret A Manger's single espresso was found to contain 180mg of caffeine. That is four times stronger than the equivalent espresso sold at Starbucks and provides nearly half of an adult's total recommended daily caffeine intake.
Despite health warnings regarding high caffeine intake, scientific studies also suggest potential long-term benefits. A 2026 study found individuals who drink five or more cups of coffee daily are 47 per cent less likely to develop liver cancer, while other research connects regular coffee consumption to a reduced risk of heart disease due to anti-inflammatory plant compounds known as polyphenols.
To explain how caffeine interacts with the human body, medical and nutritional experts have detailed the physiological journey of a morning cup of coffee from the first sip to bedtime.
Immediate Brain Lift and Bloodstream Absorption
Caffeine's effects begin almost instantly, long before the chemical reaches the brain or bloodstream.
Dr Gregory Marcus, chief of cardiology for research at the University of California, said: "Caffeine consumed in coffee is a key part of daily life for millions of people." He added that for most adults, an intake of up to 400mg a day, around five cups, without added sugar is safe and does not increase cardiovascular risk, though higher doses of caffeine may have more harmful effects.
As liquid enters the mouth, taste receptors send rapid signals to the brain, activating nervous system pathways associated with alertness and reward. This creates an immediate feeling of mental uplift, although some experts state this initial mood shift is likely a placebo effect for regular morning drinkers rather than a biological change.

The physical chemical absorption follows shortly after. Dr Duane Mellor, a registered dietitian from the British Dietetic Association, explained that caffeine begins appearing in the blood within ten minutes of the first sip. While small amounts are absorbed through the mouth and stomach lining, most absorption occurs in the first part of the intestines.
Within ten minutes, mental performance improves, making drinkers feel more alert. By 20 minutes after consumption, the full physical energy boost takes hold as caffeine enters circulation.
Peak Caffeine Levels and Mid-Morning Jitters
Most people reach peak caffeine concentrations in the bloodstream between 30 minutes and one hour after drinking coffee.
As caffeine circulates, adrenaline levels rise, triggering the body's natural fight or flight stress response. Blood flow to the brain increases, driving up blood pressure and sharpening concentration.
Alertness reaches near maximum levels during this period. Activity of dopamine, a brain chemical linked to pleasure and motivation, increases slightly, boosting overall mood and workplace productivity.
However, individuals sensitive to caffeine may experience anxiety, heart palpitations, and muscle tremors following this peak. Experts advise drinking coffee alongside food to delay the rate of caffeine absorption into the bloodstream and reduce these side effects.
Impact on Urinary System and Digestive Tract
Beyond brain function, caffeine acts as a diuretic, altering kidney function and fluid excretion.
When caffeine enters the bloodstream, it inhibits the production of adenosine, a signaling molecule that normally promotes water reabsorption back into the blood. Blocking this process reduces water absorption, increasing urine output and causing more frequent urination.
Research indicates coffee is not inherently dehydrating, as the body develops a tolerance over time. A 2014 study showed a small cup of coffee has no link to fluid loss, meaning moderate coffee drinkers do not need to compensate by drinking extra water. However, diuretic effects become more pronounced with large caffeine doses or when individuals are already fluid-depleted.
Coffee also stimulates the gastrointestinal tract by prompting the release of gastrin, a hormone that signals the stomach to produce acid. This aids digestion and relieves constipation for some, but can cause heartburn, acid reflux, and indigestion in others. Decaffeinated coffee can trigger similar acid production because bean polyphenols drive the reaction.
Intestinal responses occur rapidly, with increased activity in the large intestine recorded just four minutes after drinking coffee. Over time, regular coffee consumption positively alters the gut microbiome by encouraging beneficial bacteria that reduce bowel cancer risk and inflammation. A 2017 review covering over two million participants found colon cancer risk fell by around seven per cent for every four-cup increase in daily coffee intake.
Afternoon Crash and Nighttime Sleep Disruption
The stimulating effects of morning coffee eventually yield to a slump in physical and mental energy later in the day.
Caffeine has a half-life of six hours, meaning half the substance remains active in the system hours after drinking. As caffeine breaks down, exhaustion-inducing adenosine accumulates rapidly in the brain, creating heavy sleep pressure.
This transition causes a sudden crash marked by fatigue, brain fog, irritability, headaches, and low motivation. For those drinking coffee at 9:00am, this chemical drop coincides with the body's natural afternoon dip in alertness, intensifying feelings of exhaustion.
To counteract the slump, drinkers often reach for another cup as brain receptors wait for another stimulant hit. Nutritionists warn that repeated afternoon caffeine hits perpetuate fatigue and disrupt evening sleep.
A study published in the Journal of Clinical Sleep Medicine found caffeine consumed six hours before bedtime significantly disrupted sleep, even when participants reported they could no longer feel its effects. Experts emphasize that avoiding late-day caffeine is key to breaking the cycle of poor sleep and morning coffee dependency.
