Mushrooms, technically neither vegetables nor animal products but members of the fungi kingdom, are drawing growing scientific attention for a nutritional profile that includes protein, fibre, potassium and B vitamins alongside bioactive compounds such as beta-glucans, ergothioneine and polyphenols.

Researchers are studying whether these compounds play a role in inflammation, gut and cardiovascular health, metabolism and even cancer prevention. But experts caution that mushrooms are a nutritious food, not a medicine, and that evidence from human studies remains limited for many of the claims made about them.

Effects on inflammation

Chronic inflammation underlies many diseases, including cardiovascular conditions, diabetes and certain cancers. Edible mushrooms contain bioactive substances that have shown anti-inflammatory and immune-regulating activity, particularly in laboratory and experimental studies.

Mushroom beta-glucans have drawn particular interest. A systematic review of 34 randomised clinical trials found evidence of immune-regulating effects, though the researchers noted the results were inconsistent and that more research is needed. The claim that mushrooms fight inflammation therefore needs qualifying: interesting biological mechanisms exist, but there is no proof that a serving of mushrooms treats an inflammatory disease.

A natural antioxidant source

The body naturally produces free radicals during normal function. When the balance between free radical production and the body's antioxidant defences is disrupted, oxidative stress results, which is linked to cellular damage and chronic disease.

Mushrooms contain antioxidant compounds, notably ergothioneine as well as polyphenols and other bioactive substances. This is one reason researchers are examining whether regular mushroom consumption might be linked to better long-term health.

Cholesterol and heart health

Mushrooms contain fibre and beta-glucans, substances linked to lipid metabolism. A systematic review on mushrooms and cardiovascular health reported possible favourable effects on markers including LDL, HDL, total cholesterol and triglycerides.

However, a more recent systematic review on cardiometabolic health noted that available studies remain few and do not allow firm conclusions about preventing cardiovascular disease or type 2 diabetes. Mushrooms fit well into a heart-protective diet, researchers say, but should not be presented as a food that lowers cholesterol on its own.

Gut microbiome effects

Another strength lies in the gut. Fibre and beta-glucans are not fully digested in the upper digestive tract and can reach the colon, where they interact with the gut microbiome.

Scientific literature on beta-glucans from edible mushrooms describes possible effects on immune function and gut health. Fibre also supports normal bowel function and satiety. Mushrooms can therefore be part of a diet that supports a healthy digestive system, without acting as a treatment for gastrointestinal disorders.

Mushrooms and cancer risk

One of the most striking research associations concerns cancer. A meta-analysis of 17 studies found that people with the highest mushroom consumption had a lower overall cancer risk than those with the lowest consumption, with the association particularly evident for breast cancer.

Similar interest surrounds stomach cancer. A pooled analysis and meta-analysis found an association between higher mushroom consumption and lower risk of gastric cancer.

The key word, however, is association. Most of the relevant studies are observational and cannot prove that mushrooms themselves caused the reduced risk, since people who eat them more often may also follow different overall dietary and lifestyle patterns. The evidence is interesting, but it does not justify claiming that mushrooms prevent cancer.

Blood pressure: a possible ally, not a cure

Mushrooms are naturally low in sodium and contain potassium, making them an easy addition to a heart-friendly diet. They also contain ergosterol, polyphenols, polysaccharides and other substances whose possible effects on blood pressure are being investigated.

Even here, human data are not strong enough to support the claim that regular mushroom consumption alone reduces hypertension. Systematic reviews describe the related findings as limited or inconsistent.

Immune system and antimicrobial claims

In the laboratory, components of different mushroom species have shown antimicrobial, immune-regulating and other biological activity. That does not mean eating mushrooms works like an antibiotic or antiviral drug.

The most interesting clinical data again concern beta-glucans. A systematic review of randomised trials found evidence they may affect immune response, but stressed that more studies are needed to establish effectiveness and appropriate doses.

Blood sugar effects

Mushrooms have a significant practical advantage: they contain few carbohydrates and very little sugar, while adding bulk and flavour to a meal without a large calorie load. This makes them an easy choice within a balanced diet for people watching their blood sugar.

That should not be taken as far as claiming mushrooms lower blood sugar or increase insulin. A systematic evaluation of available human studies found limited evidence and no consistent improvement in markers such as fasting glucose and HbA1c.

A meat substitute, but not protein for protein

The umami flavour and texture of mushrooms make them an excellent ingredient for replacing part of the meat in burgers, sauces, pasta dishes and more, which can reduce a meal's calories and saturated fat depending on how it is cooked.

There is a common misconception, though: mushrooms are not an equivalent protein substitute for meat. A typical serving of fresh mushrooms provides a relatively small amount of protein, so in a vegetarian diet it is useful to combine them with legumes, soy products, nuts or other protein sources.

An unexpected source of vitamin D

Mushrooms have another distinctive feature. Some, when exposed to ultraviolet light, can significantly increase their vitamin D2 content. The United States National Institutes of Health lists mushrooms among dietary sources of vitamin D and notes that UV exposure can boost their content.

The amount varies considerably depending on the species and production method, so it is worth checking the nutrition label.

The danger of wild mushrooms

There is no room for experimentation here. Wild mushrooms should never be eaten simply because they resemble an edible species, since some highly toxic species can look similar to edible ones, and poisoning can cause serious liver or kidney damage or even prove fatal.

The safest choice is mushrooms from a controlled and reliable source. Identifying wild mushrooms should never rely on internet photos, apps or empirical "tests." Cultivated mushrooms also require proper storage and preparation, like any perishable food.

Is it worth eating mushrooms often?

Yes, but for simpler and more solid reasons than the dramatic claims that circulate online. They are low in calories and fat, offer fibre, micronutrients and interesting bioactive compounds, and can make a meal filling and flavourful without adding much of a burden.

Science offers interesting indications for the microbiome, inflammation, cardiometabolic health and possible associations with lower risk of certain cancers. At the same time, the best current reviews remind us that many of these benefits have not yet been definitively proven in humans.

Their real advantage, then, may not lie in any single "magic" property, but in being an easy and tasty way to make an already good diet even better.
